Converting only Data Disk to VMDK

Just curious.   I'd like to move to Windows 2008 from Windows 2003.   I have my physical server setup with 2 physical drives.  The first has only the System OS while the second contains just data.   Is it possible to just convert the DATA disk to vmdk?   I figure that I could P2V the server , remove the Data Disk from the VM, blow away the System Disk and add another vDisk with Windows 2008, then attach the Data Disk to the VM.   That probably will work but that's a lot of work just to keep the Data Disk.   So, I wondered if it is possible to just convert the Data Disk and store it offline.   Then, all I have to do is create a new VM with Windows 2008 and add the Data VMDK disk.
